Holiday Ham – Italian Style!

An oven-ready Porchetta roast from Niagara Foods Specialties, is a great time-saver, especially during the holidays when your time together is so valuable. Seasoned with sea-salt, black pepper and wine, the roast is ovenready and available in a convenient 5.5kg size.

Ingredients

3.50 kg Niagara Food Specialties Porchetta Oven-ready Roast

Directions

Thaw porchetta 24 to 48 hours in refrigerator.

Arrange porchetta onto an aluminum foil tray or your BBQ spit.

Place roast in BBQ at 275F until internal temperature reaches 145F at which point you can raise the temperature to 350F to darken and crisp up the crackling.

Once the internal Temperature nears or reaches 160F pull from the BBQ and let rest for an hour to allow the juices to congeal.

Serve with your favourite large cut grilled vegetables or just get some ciabatta buns out with a little mustard.

Figs Wrapped in Pingue Pancetta

Seasoned with a delicate blend of roasted garlic, Black pepper, rosemary, sage, and bay leaf, our Pingue Pancetta adds a subtle flavour. If you like easy and tasty, this recipe is guaranteed to make you a star!

Ingredients

1 Slice Pack (12) Niagara Food Specialties Pancetta
6 Whole Ripe Figs (Black Mission or Brown Turkey)
Toothpicks (medium to long)

Directions

Wash figs and let dry.

Trim stem and slice ripened Figs into halves.

Carefully wrap the strips of Pingue Pancetta around the halves and fix with toothpicks.

Put on some music, pour your favourite wine and Grill as you serve fresh and enjoy with friends.

Canadian Pea Meal Backloin Bacon Melt

Ingredients

1 Slice Pack Niagara Food Specialties Canadian Pea Meal Backloin Bacon
6 Ciabatta Buns or Rolls
300 g of your favourite grated Cheddar Cheese (aged White or Yellow)

Directions

Grill or barbeque the Peameal slices at about 350º until cooked. Once done, turn the slices over, add your cheese to melt, and serve hot on the buns or rolls.

Custom Sausage Sandwhich with Pancetta

Ingredients

1 Pingue Sausage Coil (Salt & Pepper, Original- salt, pepper & chilies, honey garlic, Fennel – salt, pepper, chilies and fennel seed)
100 g Pingue Pancetta Slice pack
2 Spanish Onions (medium size)
2 Red Bell Pepper (chopped)
160 g Pingue Pancetta Lardons
olive oil
Salt & Black Pepper (to taste)
1 Round Ciabatta Loaf (medium size)

Directions

Grill Pingue Pancetta lardons until they begin to render, add onion 10-15 minutes, add bell peppers until caramelized.

Grill Sausage coil for 12-15 minutes at 350-400F° degrees.

Toast Ciabatta loaf and serve piping hot with your favourite condiments, a good wine and your summer soundtrack.
