Sealed in a black wax casing it is creamy and slightly sharp in taste, but not as strong as some traditional Blue Cheeses. It is ideal for salads, soups, sauce and pastas, and on a gourmet cheese tray. Wine Pairing: Savour with Syrah, Chardonnay, Sherry or dessert wine such as a Sauternes, or sweet flavoured beers like the Blueberry or Raspberry ales.
